Adrien Redon | Un R d’Autrefois Extra Brut

Enjoying: Light green apple juice color with small bubbles. Fresh apple notes, with toasty flavor and a soft cheese texture. Not sweet or acidic, but rather subtle. Will be sipping on this with a bison burger and a wagyu filet minion - because why not.

Celebrating: Reached my goal of getting under 180 lbs; it took 4 months and I lost 23 lbs. Yeah!

Adrien Redon | L'R du Temps Rose

Enjoying: Dark red, like a diluted cherry color with small bubbles. Cherry and apple nose. Tangy citrus on the pallet followed by a citrus finish of berries.

Celebrating: Father's day, making paella and drinking champagne after setting up the new scopes on the pellet rifles and a long walk with the family.

Enjoying: Medium green-gold color, scent of fresh apple. Clean apple taste, solid choice to have around. I wouldn't complain if someone gave me a bottle, but I wouldn't go out of my way to buy one.

Enjoying: Medium pink, light ruby red with small bubbles. Fresh strawberries one the nose with orange notes and a crisp finish.

Cave de Lugny | Crémant de Bourgogne Brut Rosé

Enjoying: Salmon color with big bubbles. Fresh fruit nose of cantaloupe. Tartiness and minerality leads to a short finish. Not the smoothest finish, it is like tart berries.

Celebrating: Trying fall mimosas with apple cider and apple crown royal.

De Chanceny | Crémant de Loire Brut Rosé

Enjoying: Strawberry red with small bubbles. Notes of brie, strawberries/rhubarb with a little tartness. Toasty at the end without sweet notes.

Celebrating: Nico's birthday party. 

Delamotte | Brut

Enjoying: Light green/yellow color with lots of little bubbles that burst on the tongue leading to a citrus welcome . Fresh notes lead to lemon custard notes with a toasty aftertaste. It's on the tart side of things with a clean finish.

Enjoying: Nose of brioche and pear. Tastes like pear and cranberry, very tart. Big bubbles

Enjoying: Light melon color with small bubbles. Nose of bread dough and slight peach. Fresh fruits and a light strawberry tartiness.

Enjoying: Light yellow and medium bubbles accompany a toasty cheese taste with a subtle nutty finish.

Celebrating: Chilling in the bath at the Viceroy hotel in los cabos after lunch and a long walk. 

Hervieux Dumez  | Les Grains Blanc de Blancs Brut

Enjoying: Bright lemon yellow with small bubbles, toasty notes like lemon pancakes without sugar and a lemon rind finish that makes your mouth water.

Celebrating: Boys finished school.

Jean Baillette-Prudhomme  | Heritage Fut de Chene Extra Brut Premier Cru

Enjoying: Light green/yellow color with small bubbles. Nose of fresh fruit and cheese. Minerals accompany a green apple scent with a honey-like lingering aftertaste.

Jean Baillette-Prudhomme  | Rosé de Saignée Premier Cru

Enjoying: Big bubbles, medium pink color; bread to the nose; acidity cuts through with likes of strawberry and cherry; citrus fruits. Very sharp and tart at the end (not in a bad way though); it is a toasty finish

Enjoying: Light yellowish-green with small bubbles. Fresh nose of grass with honeycomb texture and a chalky finish.

Celebrating: Anniversary champagne we brought to dinner at Langdons.

Louis Roederer | 2013 Cristal

Enjoying: Light golden color with tiny bubbles. Cool and fresh peach and apple nose . Tartness hits the palate with citrus and a bit of sweetness that lasts. A medium finish of lemon and minerals rounds it out. Most lemony champagne I've had so far.

Celebrating: My 39th birthday. I took the day off from work to stay home, eat a nice wagyu NY steak, caviar, champagne, and Linda's tres leches cake - My favorite meal :)

Enjoying: Light golden apple color accentuated by lots of big bubbles. Not sweet at all, tart and acidic finish like buying into a green apple. Nutty finish.

Enjoying: Golden apple color with small bubbles, scent of brioche and citrus. Notes of balanced lemon.

Enjoying: Sweet strawberries and cream, and a little tart finish. Big bubbles. Pinkish color. Tart sharp finish.
